  2. Añadimos el pollo condimentado anteriormente con sal, ajo, pimienta negra y perejil, y cortado en tiras. Lo hacemos un poco hasta que coja un poco de color, pero solo un poco. Cuando este hecho añadimos una cucharada de tomate frito y removemos un poco más.
  3. Echamos 60ml de vino oloroso y dejamos a fuego medio hasta que reduzca. Cuando esté, añadimos los cuatro vasos de agua muy caliente (700-800ml), el avecrem, y una puntita de cuchara de colorante y curcuma, removemos y esperamos que hierva.
  4. Cuando el caldo esté burbujeando echamos el arroz redondo y removemos que se reparta bien. Probamos de sal y dejamos que se haga el arroz el tiempo que el fabricante publique en el envase.
  5. Si es posible, lo removemos muy poco durante el tiempo que dure el cocinado. Si vemos que se queda muy seco durante la cocción, añadimos algo más de agua que esté muy caliente. Cuando pase el tiempo apartamos y dejamos reposar cubriendolo con un paño limpio.
