- En otra olla distinta pon los mejillones con un poco de agua a fuego fuerte, en 10 minutos aproximadamente se abriran y soltaran un caldo. Añadelo a la olla del fumet de las gambas
- Añade la pechuga de pollo cortada en trozos mezcla y espera a que se dore
- Añade al sofrito los mejillones pelados las gambas y la cola de rape, mezcla. Añade el arroz y mueve hasta que los granos transparenten
- Añade el azafrán y el colorante al fumet caliente, después echa el fumet al sofrito
- Espera unos 20 minutos a fuego medio alto. Si te gusta el socarrat (arroz tostado) sube a fuego alto los últimos minutos.
