- 15 ml vinagre blanco

- Vamos a retirar la cáscara de medio limón y la vamos a limpiar bien de su parte blanca, a continuación la cortamos en una juliana fina y la ponemos en un bol amplio al que también añadimos el azúcar, el vinagre blanco, la miel, el zumo de limón, los polvos para flan y el agua, removemos todo y reservamos la salsa para más adelante.
- Ahora dividimos la pechuga en 3 partes y de cada parte sacamos filetes de bocado, los damos unos golpecitos con el canto del cuchillo y terminamos aplastándolos un poco, así la carne quedará mucho más tierna.
- Una vez tengamos toda la pechuga troceada la pasamos a un recipiente amplio y la agregamos la sal, la pimienta negra, el vino, la maicena, los polvos para flan y por último un huevo, removemos y ya tenemos el pollo en una marinada que a su vez nos hace de rebozado, así que pasamos cada trozo de pollo por abundante harina de maíz y acto seguido sumergimos en aceite vegetal.
- Hay que freír el pollo con el fuego fuerte durante un par de minutos, cuando este dorado y crujiente lo sacamos sobre papel absorbente para reducir el exceso de grasa, ahora solo nos queda añadir la salsa de limón a una sartén y dejarla caramelizar y espesar unos minutos a fuego medio, acto seguido lo vertemos encima del pollo ya en un plato para comerlo.
