- Lo primero que hacemos es poner a macerar el pollo. Para ello, cogemos un bol al que dentro le pondremos una bolsa de plástico.
- En esa bolsa de plástico, metemos las pechugas y les echamos la ralladura de la piel de los limones. Después los exprimimos por encima del pollo.
- Como el cilantro no lo tenía molido, sino en grano, lo puse en un mortero y lo machaqué. Añadimos ahora a la bolsa el aceite, las dos cucharaditas de pimentón picante, de comino molido, el de cilantro molido y las guindillas secas partidas en trocitos pequeños.
- Rallamos los ajos y los incorporamos junto con la canela molida, la nuez moscada rallada, la sal y las hojas de laurel.
- Cerramos la bolsa de plástico y mezclamos bien todos los ingredientes. Lo dejamos macerar en la nevera un par de horas.
- Mientras tanto preparé la salsa Shawarma, echando en un bol el yogur natural, la salsa tahini, la sal y los ajos rallados.
- Removemos bien con una cuchara y cuando coja una textura uniforme, la tapamos y la guardamos en la nevera, hasta que la vayamos a gastar.
- Una vez que ha pasado el tiempo para macerar el pollo, encendemos el horno para que se vaya calentando a 210º. Sacamos el pollo de la nevera y lo colocamos sobre una bandeja o molde para horno para hornearlo a 210º, de 15 a 20 minutos.
- Mientras tanto vamos preparando el relleno que pondremos junto al pollo en las tortitas.
- Colocamos en la mesa el pollo, las tortitas calientes y el resto de ingredientes y nos hacemos a nuestro gusto las fajitas rociadas con salsa Shawarma.
