- Limpiamos el pollo de piel y grasa, troceamos y colocamos en la bandeja del varoma. Adobamos con sal, pimienta, comino, perejil, cilantro en polvo u hojas, ras el hanout y pizca de chili molido. Colocamos sobre la parte honda con las patatas y tapamos.
- En el vaso ponemos 600 g de agua, colocamos el varoma y programamos 30 minutos, varoma, vel 3. A los 20 minutos ponemos a precalentar el horno a 180º.
- Retiramos el varoma, colocamos en una fuente de horno, las patatas y sobre ellas el pollo. En un bol reservamos el agua de cocción al vapor.
- En el vaso ponemos la mantequilla, el aceite, 1/2 cc de comino en polvo, 1 cc de ras el hanout y 1/4 cc chili en polvo, añadiendo 100 g del agua de cocción (con el resto podemos utilizarlo para otro plato, por ejemplo, un arroz). Mezclamos 10 seg. vel. 4. Echamos sobre el pollo y metemos al horno, con el grill, a 180º, 10/15 minutos o hasta que veamos dorado. Servimos caliente.
